Don't even get me started on potato pancakes...oh how they are loved in our house. Growing up, my Grandpa would make the most amazing potato pancakes for big family meals. This is not his recipe, it's mine (I'm pretty sure his were laden with eggs and butter...but he does appreciate my knack for healthier cooking). And I do serve them with homemade applesauce just he used to :)
makes about 10 small pancakes
3 large russet potatoes
1 tablespoon ground flax seed
2 tablespoons warm water
1/3 cup plain soy milk
1/4 cup white whole wheat flour
1/2 teaspoon baking powder
salt and pepper to taste
grapeseed oil for frying (or other high heat oil)
Mix ground flax seed and warm water in medium bowl. Add soy milk, flour, baking powder, salt and pepper and mix. Peel and grate potatoes and stir into batter.
Heat 1 tablespoon of oil over med-high heat and fry pancakes about 2 -3 minutes on each side, or until golden brown. Serve immediately with sour cream, fresh applesauce, butter, or maple syrup.
