recipe: easy bruschetta

Nothing says July to me like fresh basil on a cool summer evening! One of our favorite summer meals is my simple version of homemade bruschetta...

I slice up a loaf of crusty bread and lay the slices on a baking sheet, brushing them with olive oil. Then we top them with slices of fresh mozzarella , tomato and torn basil leaves... the kids are always sneaking bites of mozzarella during this part! I toast them in the oven for about 20 minutes at 350, just enough for the bread to be a bit crispy and the mozzarella nicely warmed. Delizioso!
