Sharing an old favorite of ours today.. salt and pepper tofu! Tofu can be tricky to learn how to cook with but once you have it down, it's really super easy. Our kids love it, especially Akemi, it's right up there with strawberries as one of her favorite foods! BUT there is a secret! To get your tofu nice and light and crispy, you need to freeze it first. I buy packages of tofu and pop them right in the freezer, then the night before I want to bake some up, I put it in the fridge to thaw. Freezing and thawing gives it a lighter, more spongey texture, like fried tofu, but without the frying :) We like to eat this with rice and bok choy, but really it goes with anything!
SALT + PEPPER TOFU
serves about 3
1 lb tofu, frozen and thawed
3 tablespoons coconut oil
fresh ground salt and pepper
1. Preheat oven to 350.
2. Open and drain thawed tofu. Squeeze excess water from tofu and cut into cubes.
3. Toss tofu cubes in dish with coconut oil and sprinkle with salt and pepper to taste.
4. Spread tofu cubes on baking sheet and bake approximately 15 minutes or until golden and starting to crisp.
